The heart of any kitchen is the food of course! Food is the essential main ingredient to a healthy life, but all too often it becomes the cause of many illnesses. So many of us are constantly in conflict between what tastes good, and what is good for you. Every recipe I include on my site must meet my 3 main rules: It has to be enjoyable and tasty, it must be very nutritious, and it should be affordable on a modest budget.

Bitchin Ideas: Food and Beer Mingling

One of my favorite things to do is start with awesome beer and food ingredients. Then add some of the beer to the food I am making. Then serve the beer with the food. The easiest, most delicious combination that is a pretty regular feature in my bitchin kitchen:

Mexican Farmhouse Beer Butt Taco Dinner Served with Dark Mexican Lager Homebrew

This dinner is awesomely bitchin, will please just about everybody, and is not too much work on fiesta day if you prepare the beans, salsa, and rub ahead of time. Of course, if you brew your own beer, that will require a few months of lead time.. but you could just go out and buy some Negra Modelo and have this feast in a couple of days! Some, like the beans, need some advance planning. You could get by with a can of refried beans, but by doing that you are missing out on a incredible flavor experience- not to mention better nutrition!

In addition to the recipes above, to assemble the tacos you will need fresh corn tortillas, fresh whole limes, shredded Mexican blend cheese, and if you can get it, some fresh Quesero crumbled cheese. For the tortillas, I love the LaTortilla Factory handmade style that have both corn and wheat, and come in a few flavors including green chile and chipotle.

If you have prepared the beans, chicken, and salsa ahead of time, and your home brewed Negra Modelo is ready to drink, putting this meal together is a snap. While the chicken is roasting, throw together the Guacamole:

Quick Chunky Guacamole

The trick with great guacamole is to let the cooling, rich flavor of the avocado shine. So adding just a dash of other ingredients helps keep the avocado from going brown while highlighting its flavor. Keeping then avocado pieces large adds interesting texture to the meal.

Recipe for 6 to 8 Servings:

2 ripe avocados
Juice of 1 limes
Dash of green or red chili sauce. I like to use Jalapeno Tabasco
Dash of sea salt

Peel and pit the avocados. Chop into small chunks. Squeeze in the lime juice and season with salt and pepper. Use a fork or small whisk to lightly mash some of the pieces so they create a saucelike coating for the other pieces. Serve with pride!

Although avocados are high in fat, they are loaded with fresh, not rancid monounsaturated oleic acid, lipase, and vitamin E. All good fats that a healthy body needs. They also have a well rounded dose of vitamins and minerals. If you love avocados, rejoice. They are good for you!

The last step in preparing this awesome meal is to grill the totillas. If using plain corn tortillas, grill them over a barbecue or in a cast iron skillet lightly brushed with oil. This softens them and really brings out the corn flavor. Have some shredded Mexican cheese and crumbled casero cheese handy, and you are good to go.
